Why is sour dough bread so much lower on the glycemic index than regular white bread? Would buttermilk made bread have the same effect?

    ~*~Sour dough bread is lower on the hypoglycemic index because the microbes (sourdough yeasts) in the sourdough eat the sugars in the flour, which causes the bread to rise. Buttermilk would not do this, so no it would not decrease the amount of sugars.
