I know a lot of people substitute sugar with Splenda in their recipes. :)

I have used splenda one for one. I have also used honey. It breaks down slower than sugar, so even diabetics can generaly use honey alright. You might try using flour but substituting some of the flour for soy flour. It will give your cake an odd taste if u use too much, but it has almost 3 times the protein of normal flour. Having more protein will also help. You won’t have such a sugar rollercoaster. I also have problems with sugar. :) good luck.

I have done a little baking with stevia, and the problem is the after taste I getfrom stevia, but if you commonly use stevia and don’t mind hte taste go ahead.

Just remember that stevia is SO much more potent than sugar so add a little and taste then go from there.

I have not used nut flours for baking and from what I have read I think they may be to heavy.

Can you use brown rice flour or somehting else like that etc…And if you do use brown rice flour and stevia send me a recipe and how it worked please, I am looking for recipes for my Dad.

Instead of white flour substitute whole grains and/or use bean and nut flours

Here’s a list of 17 cakes made with agave nectar. Many, but not all are low glycemic also. The one that sounds most intriguing to me is the Purple Velvet Torte. I’m defintely going to try that!

Here’s a blog recipe site which has gluten free recipes and most or all use agave nectar. Look at this orange cake! Yummmm!:

I happen to love agave nectar and buy it in bulk from Amazon. I also like to make low glycemic, low gluten things when I can so I enjoyed helping you find some recipes. I’m def making the orange cake and the purple torte. Enjoy your cake!
