does having protein fat and carbs all at once make for a low gi??
say i eat a peice of white bread….that has a high gi
now say i eat a chicken sandwich on white bread with cheese chicken cucumbers lettuce and mayonnnaise….wouldn’t that have a low gi???
and whats the difference between Gi and GL? which one is more important? whats a better choice, to have something with a high Gi and low GL or vice versa?
if i had to only rely on one source, should i look at the Gi or GL????

Let me anwer the question in reverse order.
GL (glycemic load) gives a more accurate picture of how a particular food affects blood sugar than GI (glycemic index). GI tells you how much of a spike but does not tell you the level of blood sugar if you ate a smaller portion over a period of time. This is important because even if your GI does not spike but rises slowly and continues to remain high over time, this could also lead to diabetes. GL tells you this, plus GL factors in GI.
A low GI can be affected by certain carbs depending on the source of the sugar — complex carbs which have high amounts of fiber so it releases the sugar bind in the fiber more slowly. If you were to eat a candy bar loaded with refined sugar and ate a salad, it would not work like this. Simple carbs (sugar) is very fast absorbing, so even if you ate other things such as meat and vegetables, it would still be absorbed before the other stuff.
In your example of a sandwich, it may result in low GI, but you would have a high GL because the white bread, cheese, and mayo would keep your blood sugar level at a higher level although the rise would be slow.
